Don’t like vegetables? Nutritionist suggests delicious ways to add them to your diet

Not everyone likes eating vegetables in their traditional form with either roti or rice. Excluding them from the diet could increase one’s risk of nutritional deficiencies, obesity, and even chronic diseases. Vegetables, especially green leafy ones are rich in soluble and insoluble fibre, vitamins, minerals, calcium, iron, folic acid, potassium, phosphorous and magnesium. They also help with constipation and support bone health. People with diabetes and cardiovascular conditions are advised to eat them in ample amounts to manage their condition. But what if you do not like to have veggies at all? There are many ways to include them in your diet. Nutritionist Pooja Makhija in her recent Instagram video suggests 5 easy ways to eat your veggies in a way that will make you fall in love with them.

VEGETABLE JUICE

One way to reap the benefits of all those glorious antioxidants, vitamins and minerals in veggies is to juice them. The good part is that you can include more than one vegetable in your juice although you would still be missing out on fibre.

“Take any three colours, make a juice, and enjoy all the goodness of antioxidants,” says Pooja Makhija.

DELICIOUS SOUP

If chewing veggies is not your thing, you can make soups out of vegetables. Be it spinach, fenugreek, carrot, peas, tomato, chop these vegetables, add some flavours, herbs, some stock, chicken stock – anything that lets you have your roughage and fibre.

TASTY PARATHAS

Grate the vegetables and knead them into parathas, suggests Makhija. The nutritionist says that instead of making vegetable parathas, one can knead them into the dough and “no one would know you are eating fibre and your vegetables.”

PIZZA

Take vegetables be it carrot, spinach, or anything that is available. Put two tbsps of any flour – whole wheat flour, ragi flour – and then make a pizza base out of it. Add a little bit of marina sauce, a little bit of pasta sauce, pizza sauce, cheese and you are done.

YUMMY PASTA

Makhija says that one can also prepare yummy pasta with the help of vegetables. Grate pumpkin or carrots and make a sauce out of it. You could add this sauce to your pasta and this way you can eat your vegetables and actually enjoy them.
