Ingredients:

Roasted oats ½ cup (50g)

Brown bread slices 4

Finely chopped spinach (paalak) leaves 1 cup (100g)

Small onion – chopped 1

Salt and pepper as per taste (optional)

Low fat milk ½ cup (100g)

Tomato puree (prepared in a mixer) 4 tsp

Sesame seeds 2 tsp

Tomato slices – cut into strips for garnishing few slices

Method:

Heat a pan. Add roasted oats, chopped onion and sauté for a minute. Add chopped spinach, salt and pepper and sauté for 2 minutes. Add milk stirring continuously and cook for 2 minutes.

Remove from fire and keep aside. Pre-heat oven at 200°C. Spread 1 tsp tomato puree on each slice. Spread spinach mixture on it and sprinkle sesame seeds. Garnish with tomato strips and bake for 7-8 mins till bread is toasted.

Serve whole or cut into 2 triangles.

The leaves of spinach are also rich in protein, iron, vitamins and minerals. The vitamin A in it moisturises the skin and hair while the vitamin C in it provides structure to skin and hair and the iron content keeps hair loss at bay.

It not only helps in managing diabetes and preventing cancer but also helps prevent asthma and lowers blood pressure. It could reduce the risk of oxidative stress while the vitamin K in spinach is very good for bone health and the vegetable in general is “a glowing skin tonic” for everyone.

Til or sesame seeds are excellent for bones due to its manganese and calcium content, good for lactating mothers and growing children as it improves the quality of haemoglobin and digestion, prevents respiratory and lung problems like asthma and allergies, builds immunity and strength and is rich in minerals.
